Getting Started

  • Our books open for slaughter appointments twice each year. First Monday in October for following January-June appointments. First Monday in March for following July-December appointments. Please call 276-466-3000 one time and leave one message. We will return your call in the order it was received.
  • Call to schedule appointment(s). You will be given an appointment date. Be specific if you need a Custom (Not for Sale) or USDA Inspected appointment. Cancelled appointments will incur cancelation fee of $50 per animal.
  • All livestock must arrive by 8am on appointment date. IF prearranged livestock may be dropped off the day before harvest between 2pm-4pm.
    Late arrivals will be charged a $50 fee and may not be accepted for harvest.

Drop Off

  • When you arrive on scheduled appointment day check in with the office for instruction.
  • Once livestock is unloaded, they will be tagged with their unique number, that number will be put on the cut sheet that goes with your livestock. All cut sheets must be present at time of drop off and include a name, phone number and address of the producer and customer. Cut sheets not turned in with livestock will incur a cut sheet late fee of $25 per cut sheet. NO changes will be allowed to be made to cut sheets after drop off.
  • Cows age is estimated by teeth. Carcasses are weighed once head, hide, legs and internals are removed)
  • Once Weighed the Carcass Is Moved Into the Cooler Where They Will Hang 10-14 Days for Cattle and 2-5 Days for Lambs, Goats and Hogs.

Processes

  • After Hanging in the Cooler the Carcass Is Removed and Prepped to Be Cut. All Meat Is Cut According to the Cutting Instructions the Customer Has Provided. If We Have Any Questions, We Will Call the Customer to Make Sure We Are Cutting the Meat Accurately. If We Have Not Received Cutting Instructions for the Meat the Carcarss Will Receive House Custom Cut.
  • All Meat Is Vacuum Sealed to Lock in Freshness and Labeled With the Cut of Meat. You May Choose Ground Meat to Be Vacuum Sealed for Additional Charge. You May Also Choose to Have a Custom Label. Additional Cost for Stored Custom Label and Pricing.
  • Once Your Meat Has Been Processed, Packed, Frozen and Boxed We Will Give You a Call. You Have One Week to Pick Up Meat From Time of Call. Meat Held After (1) Week Will Incure Late Pick-up Fee. Meat Not Picked Up After 30 Days Will Be Donated to Local Food Pantry.

Pick Up

When you arrive for pick up check in the office. Meat must be paid for before it will be loaded. Meat must be picked up at one time. Meat will not be stored. Meat will be give to you boxed. If you choose to put in cooler or other container you are responsible for doing so yourself. All empty boxes are your responisbility to remove.

Once your meat leaves our facility, we are no longer responsible for your product. Your meat will last a year or longer in the freezer. Be careful not to throw or smash packages as it could break the vacuum seal.
